About this coffee

Natural-process Geisha from Don Pepe Estate, a family coffee farm in Volcancito, Boquete.

Natural processing (the cherry dries around the bean) brings out a rich, fruit-forward Geisha: expect ripe tropical fruit and dark chocolate alongside Geisha's signature florals, with a full, syrupy body.

At a glance

  • Estate: Don Pepe, Volcancito, Boquete, Chiriquí
  • Altitude: 1,500–2,000 m on the slopes of Volcán Barú
  • Variety: 100% Geisha
  • Process: Natural
  • Bag: 227 g (8 oz) whole bean

About the estate

Don Pepe has grown coffee continuously since 1898 on 70 hectares, 11 of which are kept as natural reserve bordering Volcán Barú National Park. Its traceable lots are sold to demanding markets including Japan, Korea and Taiwan.

Estate recognition

A fully washed Don Pepe Geisha scored 96 points on Coffee Review (August 2015, roasted by Temple Coffee and Tea). The score is for that roaster's washed lot from the same estate; ours is the natural process.

Choosing a roast

We recommend Light Medium. A lighter roast keeps the floral, citrus and tea-like notes Geisha is prized for. Medium and darker roasts add body and chocolate but quiet those florals.

Roasted to order

We roast your coffee in small batches after you order and pack it in nitrogen-flushed bags with a one-way valve, so it arrives fresh.

Brewing guide

Pour-over: about 15 g of coffee to 250 ml of water just off the boil (92–96 °C). Total brew time around 3 minutes.

French press: about 30 g to 500 ml, steep 4 minutes, then press slowly.

Espresso: 18 g in, about 36 g out in 25–30 seconds.

Grind just before brewing for the most aroma.

Shipping & returns

Storage

Keep beans in the sealed bag or an airtight container, away from light, heat and moisture. Don't refrigerate. For best flavour, brew within 4–6 weeks of the roast date.
