Tasting notes
Bright but gentle acidity, a soft, silky body and a long, sweet finish. Expect jasmine-like florals, honey, orange and a touch of cacao.
Estate recognition
Batista Natural Geisha from Finca Santa Teresa scored 94 points on Coffee Review (October 2013, roasted by Gavagai). The score is for that roaster's lot from the same farm.
Processing
We select cherries at optimal ripeness, then clean and sort them to remove imperfections. The whole cherries are sun-dried on raised African beds for 20 to 30 days and stirred constantly for even drying. Drying inside the fruit lets the beans absorb sugars from the mucilage, giving sweet, fruity flavours.
From the farm
The farm sits west of the Barú Volcano and is bordered by virgin forest to the north and the Colorado River to the south, with century-old shade trees, several streams and mineral-rich volcanic soil.
Panama's narrow east–west shape, between two seas, sends winds from north and south into the mountains. The result is the bajareque, a fine, light rain that, together with volcanic soil, creates ideal microclimates for coffee.
Choosing a roast
We recommend Light. A lighter roast keeps the floral, honey and orange notes this coffee is prized for. Medium and medium-dark roasts add body and chocolate but quiet those florals.
Roasted to order
We roast every Sunday morning from 4:00 a.m. in small batches on Probat P12 roasters, roasting only what has been ordered. Each batch is roasted evenly to its profile, then packed while still warm.
Packaging
Our bags are nitrogen-flushed and fitted with one-way valves. Nitrogen is odourless and tasteless, so it keeps the coffee fresh for months without affecting flavour.
Brewing guide
Pour-over: about 15 g of coffee to 250 ml of water just off the boil (92–96 °C). Total brew time around 3 minutes.
French press: about 30 g to 500 ml, steep 4 minutes, then press slowly.
Espresso: 18 g in, about 36 g out in 25–30 seconds.
Grind just before brewing for the most aroma.

Storage
Keep beans in the sealed bag or an airtight container, away from light, heat and moisture. Don't refrigerate. For best flavour, brew within 4–6 weeks of the roast date.
